Chocolate fondue

Tip: The tonka bean exhales complex aromas of chocolate, almond, caramel ... If you can not find any, add a little almond extract (½ or 1 teaspoon) or a dash of amaretto .
Ingredients
- 15 cl Whole milk
- 20 cl Whole milk cream
- 400 g Milk chocolate
- 1 Vanilla pod
- 2 Tonka beans
- 6 c. soup Pralin

- 1 mix of cakes (cakes, waffles, madeleines, shortbread ...)

- 2 oranges
- 4 clementines
- 1 Organic lime
Production
- Start the chocolate fondue recipe by peeling the oranges and clementines with a sharp knife to remove the skin (zest) and the white part (ziste). Cut them into slices and arrange them in a dish. Take the zest of the lime , then squeeze it. Pour half of the lemon juice over the citrus fruits, sprinkle with zest, a little sugar, then reserve in the fridge.
- Cut the cake into cubes. Crush the chocolate roughly. Grate the tonka beans and place them in a salad bowl with the praline and crushed chocolate.
- In a saucepan, heat the milk and cream with the vanilla bean split and scraped. Bring the whole thing to a boil and, from the first few bouillons, remove from the heat. Let infuse for a few minutes, then remove the vanilla pod carefully. Pour this preparation gradually on the chocolate praline without stirring. When the fondue is homogeneous, pour it into the fondue pot and place over low heat.
- Stitch a piece of cake, dip a shortbread or madeleine in chocolate and enjoy with a little citrus salad.
